Costco’s Mayonnaise Venture: A Culinary Challenge Abandoned

In a humorous nod to the complexities of fine dining, the 2022 film "The Menu" highlights the notoriously tricky nature of emulsions, like mayonnaise, which can easily break. This reality hit home for Costco recently when it attempted to launch Kirkland Signature mayonnaise, only to retract the idea due to the challenges of perfecting this delicate condiment.

Mayonnaise, a blend of oil, egg yolks, seasonings, and an acidic component, relies heavily on emulsification—a meticulous process that requires careful ingredient mixing and timing. Despite its simplicity, achieving the perfect emulsion is notoriously difficult, even for seasoned chefs.

Costco’s development team ventured into uncharted territory by attempting to enhance their mayonnaise with omega-3 fatty acids for added health benefits. Unfortunately, this led to instability in the final product, causing the emulsion to break. As a result, the wholesale giant decided to forgo the mayonnaise market altogether, leaving it to established competitors.

Currently, consumers can find a four-pound jar of Hellmann’s mayonnaise at Costco for about $11.99, yet a Kirkland brand mayo remains nonexistent. Interestingly, as of 2025, Costco’s highest-rated mayo alternative is not Hellmann’s but a less prominent "Best Foods" brand also owned by Unilever.

While mayonnaise may be off the Kirkland roster, Costco continues to offer a wide array of beloved items, from hot dogs to napkins, ensuring summer cookouts remain well-stocked with essentials—just without its own mayonnaise. Until Costco finds a way to conquer the emulsion challenge, name-brand condiments will have to suffice for its dedicated customers.
